This Standard applies to cord-connected and permanently connected electrically heated commercial cooking appliances for use on nominal system voltages of 600 V and less, that are intended to be used in accordance with CSA C22.1, Canadian Electrical Code, Part I.

This Standard applies to commercial cooking appliances such as
a) coffee stoves;
b) urns;
c) popcorn machines;
d) pressure cookers*; and
e) similar appliances
*Pressure vessels that may operate at pressures of 103 kPa and greater are subject to inspection by pressure vessel inspection authorities.
1.3
This Standard applies to food cooking and warming appliances for use in non-hazardous locations in commercial establishments.
1.4
This Standard does not apply to:
a) electrical equipment on coal- or gas-heated cooking equipment;
b) appliances employing high-frequency currents;
c) commercial electric cooking ranges, ovens, hobs and hob elements covered by CSA C22.2 No. 60335-2-36;
d) commercial electric doughnut fryers and deep fat fryers covered by CSA C22.2 No. 60335-2-37;
e) commercial electric griddles and griddle grills covered by CSA C22.2 No. 60335-2-38;
f) commercial electric multi-purpose cooking pans covered by CSA C22.2 No. 60335-2-39;
g) commercial electric forced convection ovens, steam cookers and steam-convection ovens covered by CSA C22.2 No. 60335-2-42;
h) commercial electric boiling pans covered by CSA C22.2 No. 60335-2-47;
i) commercial electric grillers and toasters covered by CSA C22.2 No. 60335-2-48;
j) commercial electric appliances for keeping food and crockery warm covered by CSA C22.2 No. 60335-2-49; and
k) commercial electric bains-marie covered by CSA C22.2 No. 60335-2-50.

In this Standard, “shall” is used to express a requirement, i.e., a provision that the user is obliged to satisfy in order to comply with the Standard; “should” is used to express a recommendation or that which is advised but not required; and “may” is used to express an option or that which is permissible within the limits of the Standard.
Notes accompanying clauses do not include requirements or alternative requirements; the purpose of a note accompanying a clause is to separate from the text explanatory or informative material.
Notes to tables and figures are considered part of the table or figure and may be written as requirements.
Annexes are designated normative (mandatory) or informative (non-mandatory) to define their application.
